HOTEL DESCRIPTION

The small town of Saint-Malo lies at the mouth of the Rance River in northwestern France. Named after Saint Malo, the town became home to monks in the 6th century. In the Middle Ages, it evolved into a fortified stronghold, offering refuge to pirates, seafarers, and privateers.

Le Grand Hôtel des Thermes 5* opened in 1881 and quickly gained popularity as a seaside resort. It welcomed aristocrats and grand dukes among its guests. By the mid-20th century, traditional resort tourism saw a decline. In 1963, the hotel was converted into a thalassotherapy center — an emerging trend that attracted a new wave of visitors. In 1983, the property was acquired by Serge Rolik, who modernized the facilities while preserving its historic architecture, establishing one of France’s premier spa destinations.

With its elegant stone and metal façade, the Grand Hôtel overlooks the Bay of Saint-Malo and is set against the backdrop of wide sandy beaches. Coastal views can be enjoyed from the terrace, lounges, and many rooms.

The hotel features 177 rooms and suites facing either the sea or the southern side. Inspired by cruise ship cabins, the rooms are named “Croisière” and are designed for comfort and understated elegance. Accommodation categories include:

Chambre Régate16 m², single room with a view of the sea or garden
Chambre Transat24 m², double room with a cozy terrace, ideal for sunlit breakfasts at dawn
Chambre Escale30 m², enhanced comfort category, suitable for up to 3 guests, with panoramic views of the ocean or southern façade
Chambre Croisière32—40 m², available in three styles: Prestige, Grand Large, and Salon. These spacious, light-filled rooms feature soft beige tones and separate sleeping and lounge areas
Suites66 m², luxurious suite with sweeping sea views, three separate rooms, two bathrooms, and accommodation for up to 5 guests
Suite Junior660 m², generously sized room with a balcony overlooking the Bay of Saint-Malo and some of Europe’s most pristine white-sand beaches

Le Grand Hôtel des Thermes features two head chefs: Daniel Le Guénan and pastry chef Sylvain Dairel, who present refined Mediterranean cuisine across three restaurants and a bar.

Le Cap Horn — The restaurant’s main attraction is its stunning view over the Bay of Saint-Malo. Its elegant and intimate setting is complemented by exquisite dishes and an extensive wine list from renowned French vineyards. The albatross, symbol of the restaurant, is depicted amidst blue and gold hues evoking the ever-changing reflections of the sea.

La Verrière — Offers contemporary interpretations of local cuisine in a relaxed and refined setting. The menu includes over 20 dietetic dishes created in collaboration with nutritionist Frédéric Dera-Carrera. A wide variety of seafood is also available.

La Terrasse — Located on the hotel’s terrace at Sillon Beach, this seasonal restaurant serves lunch, dinner, light snacks, desserts, salads, and aperitifs during the warmer months.

La Passerelle — A bar and tea lounge with sea views, decorated in soft tones of blue, pink, and sand, with golden accents. The menu features a wide selection of cocktails and refreshing drinks.
